Steamed Cauliflower Soup
Ingredients
. 1 medium sized cauliflower
. 2 tablespoon chopped onion
. salt and pepper
. 32 oz chicken broth
. 2 slices crisp bacon
. 3 tablespoon chopped chives
. 3 oz shredded Cheddar cheese
. ½ cup light cream
. 2 tablespoon butter
Directions
1. Steam the cauliflower till it is done.
2. Keep it in the baking dish, drizzling with olive oil, salt and pepper and broil till golden brown.
3. Heat little oil in a pan and saute onions till soft, but not brown.
4. Add cauliflower, broth and simmer till very soft.
5. Puree half mixture in blender and return to pot.
6. Add cheese, bacon, cream and chives. Stir till the cheese is melted.
7. Add butter, then stir till melted and serve.
