Red Lentil Soup with Tomatoes

Ingredients

. 2 tsp olive oil
. 450g fresh soup mix
. 1 garlic clove, crushed
. 800g diced tomatoes
. 3 cups vegetable stock
. ½ cup red split lentils
. Salt & freshly ground pepper
. Coriander sprigs, to serve
. Crusty bread, to serve

Directions

1. Heat oil in a large saucepan over a medium heat. Cook the soup mix until it becomes soft.
2. Add garlic, tomatoes, stock and lentils and bring to the boil.
3. Reduce the heat, and simmer uncovered till the lentils are tender, for about 15-20 minutes.
4. Season well with salt and pepper, and top with coriander sprigs and serve with crusty bread.
