Peppery Deep Fried Turkey
Ingredients
. 20-pound turkey
. 1 tablespoon salt
. 1 tablespoon cayenne pepper
. 5 gallons peanut or vegetable oil
Directions
1. Clean the turkey well , and pat it dry from inside and outside.
2. Sprinkle it with salt and cayenne pepper. Rub the seasonings properly.
3. Keep a rack at the bottom of a deep kettle large enough to hold the turkey.
4. Pour sufficient amount of vegetable oil to cover the turkey. Heat it to 350*F to 375*F.
5. Lower the turkey into the oil very slowly.
6. Fry turkey for about 1 hour and 20 minutes or about 4 minutes per pound.
7. Remove turkey from oil and drain well.
