Minty Fruit Salad

Ingredients
For Syrup
. 1 ¾ cups fresh orange juice
. 2 tablespoons fresh lemon juice
. 1/4 cup dark honey
. 1/2 teaspoon ground cinnamon, ginger, coriander each
. 1 vanilla bean, split lengthwise

. 1 small musk melon, seeded and cubed
. 1 large banana, peeled and sliced
. ½ teaspoon lemon juice
. 1 cup blueberries or raspberries
. 2 large kiwis, peeled and diced
. 1 mango, peeled and diced
. 1 papaya, seeded, peeled and diced
. ¾ tablespoon grated lemon rind
. few fresh mint leaves

Directions
1. For making the syrup, mix the orange juice, lemon juice, honey, the three spices and vanilla bean over high heat in a sauce pan. Allow it to boil, and stir continuously to dissolve the honey. Simmer until the liquid is reduced to 1 cup, for about 8 minutes. Remove from the heat. Strain through a sieve into a small bowl. Refrigerate the syrup until well chilled, for about 1 hour.
2. In a small bowl, mix the banana slices with the lemon juice to avoid the change of color.
3. In another bowl, mix all the fruits, lemon zest and the chilled syrup and toss to coat. Cover and refrigerate it for at least 1 hour or up to 8 hours.
4. While serving spoon the fruit mixture into individual bowls, garnish with the fresh mint leaves and serve immediately.
