Crunchy Potato Crust

Ingredients
. 4 small russet potatoes
. Butter-flavored cooking spray
. ¼ tablespoon minced rosemary, basil, ground black pepper, chives, dill, garlic, cayenne pepper, caraway seed, tarragon, thyme.

Directions
1. Preheat the oven to 375 deg F.
2. Wash and clean the potatoes and then pierce with a fork. Bake them in the oven for about 1 hour, until the skin becomes crispy.
3. As the potatoes will be very hot, carefully cut them in halves and remove out the pulp, leaving about 1/8 inch of the potato flesh with the outer skin. Keep the pulp for another use.
4. Brush the inner of each potato skin with the butter-flavored cooking spray. Sprinkle all the dry herbs and spices properly. Transfer the skins back to the oven for 5 to 10 minutes. Serve hot.
